Question about FA period

At what point do you lose the exclusive right to deal with your free agents? I don't want to log on one day and see that the guy I wanted to sign is in the FA pool for everyone to bid on.

You have until the last day of the World Series. After that point, players contracts expire and they become free agents. You can sign your players whose contracts are set to expire to extensions at any time during the playoffs.
